Light and very refreshing.

This will beat any prepackaged tzatziki you will find. It is so light and refreshing and a great condiment for Mediterranean meals/ dishes. Super easy to make.
Tzatziki
Ingredients:

1 cup of Greek yogurt (plain)
1 medium cucumber (grated and squeezed)
1 clove of garlic (grated or minced)
1 teaspoon of lemon juice
1 Tablespoon of fresh dill (chopped)
1 Tablespoon of fresh mint (chopped)
salt and pepper to taste
Method of Preparation:

Grate the cucumber and ring it out with a towel. Squeeze as much liquid out as you can or the sauce will be soupy.
Add in all of your ingredients to a bowl and mix until combined.
That's it! SO EASY!
Plating and serving recommendations:
You can eat this with vegetables, use it as a dipping sauce, or eat it with naan bread. Garnish with some fresh mint and dill. I added some lemon peel to make it look pretty. I served it with chicken souvlaki and saffron rice. It goes well with Mediterranean dishes. Chill and it should be good for 3 days or so.
