CHICKEN SOUVLAKI

A simple recipe with zest and full of flavor.

This recipe was full of flavor and this exactly what we wanted. We were craving Greek food. This is a very good recipe if you are looking for something that you can put together in a hurry. You can also let it marinate for a few hours to overnight. The flavor it gets from the grill and the slight char it gets is super tasty. If you are looking for a taste of summer on a cold winter night, this is the meal for you.


Chicken Souvlaki


Ingredients:

  • 2 pounds of chicken (Cutlets work great. If not, pound it out to a 1/2 inch thick.)

  • 5 garlic cloves (grated or minced)

  • 2 lemons (zest and juice)

  • 4 tablespoons extra virgin olive oil

  • 3 tablespoons of dry oregano

  • 2 teaspoons of honey

  • 1 teaspoon of salt

  • 1 teaspoon of black pepper (freshly ground black pepper is best)


Method of Preparation

  1. If you can't buy chicken cutlets, pound out the chicken breast in a storage bag or plastic wrap to 1/2 inch thickness. Make sure the thickness is uniform throughout the chicken breast.

  2. Cut the chicken into 1 1/2 to 2 inch chunks. Uniformity is key here as well.

  3. Combine all other ingredients into a mixing bowl and mix until combined.

  4. Place chicken chunks in the marinade and mix it all together thoroughly. You can let it marinate for 1 hour to overnight.

  5. Take chicken and skewer it. Make sure you skewer the center of the chicken for uniformity so it cooks evenly. (If you are using wood or bamboo skewers, soak them or a few hours before you need them. I used metal.)

  6. Preheat your grill and get it nice and hot! I had mine on full blast to get the grates hot, then I turned it down while it cooked to not burn the chicken. **Every grill is different.

  7. Cook on each side and get a slight char. Make sure it is cooked to 165° F. It should take 7-10 minutes depending on your grill.


Plating and serving recommendations:


I served it with saffron rice and tzatziki. You can serve it with whatever makes you happy. See recipes for the rice and tzatziki if you would like! I hope you enjoy this as much as we did.
